SELTACIT: SELAI AMPAS TAHU DENGAN PENAMBAHAN KULIT JERUK (CITRUS SINENSIS) SEBAGAI INOVASI MENCAPAI SUSTAINABLE DEVELOPMENT GOALS

Abstrak

Generation Z as a generation that is strongly related to technology can play an important role in realizing the Sustainable  Development Goals. One of the embodiments of Generation Z's role is to create continuous innovation. In this study, researchers used tofu dregs, which is waste from the tofu industry. The goal is to maximize existing resources into valuable and useful products so as to reduce environmental pollution due to waste. In this study, researchers conducted observations, literature studies, and experiments to solve problems. So far, a lot of tofu dregs are wasted and have loweconomic value. This is very unfortunate because tofu dregs still have a high nutritional content, especially protein, which is 17.72%. Researchers found that tofu dregs can be made into high- quality jam with the addition of orange peel. Orange peel can be an element to add flavor and aroma to tofu dregs jam because the tofu dregs themselves tend to be tasteless and have a bad smell. This jam, the researchers gave the name seltacit. Besides being able to be consumed alone, seltacit can also be beneficial for many parties. Seltacit can help the economy, reduce environmental pollution, and reduce inequality. To get the seltacit results as expected, the researchers conducted a test on the panelists. The results of the research then the researchers describe objectively based on facts, supporting theories, and researchers' ideas. The final result is that seltacit has a sweet fruity taste, a delicious citrus aroma, a smooth gel texture, and an attractive color so that seltacit has its own advantages. In the current era of Society 5.0, seltacit can be easily published on the internet and become an invention that can pave the way for other discoveries.

Generasi Z sebagai generasi yang kuat kaitannya dengan teknologi dapat berperan penting dalam mewujudkan Sustainable Development Goals. Salah satu perwujudan peran Generasi Z adalah dengan menciptakan inovasi berkelanjutan. Pada penelitian ini peneliti memanfaatkan ampas tahu yang merupakan limbah dari industri tahu. Tujuannya untuk memaksimalka sumber daya yang ada menjadi produk yang bernilai dan bermanfaat sehingga mengurangi pencemaran lingkungan akibat limbah. Dalampenelitian ini peneliti melakukan observasi, studi literatur, hingga eksperimen untuk menyelesaikan masalah. Selama ini ampas tahu banyak terbuang dan memiliki nilai ekonomi yang rendah. Hal ini sangat disayangkan karena ampas tahu masih memiliki kandungan gizi yang tinggi terutama protein yaitu sebesar 17,72 %. Peneliti menemukan ampas tahu dapat dijadikan selai yang berkualitas tinggi dengan penambahan kulit jeruk. Kulit jeruk dapat menjadi unsur penambah citarasa dan aroma untuk selai ampas tahu karena ampas tahu sendiri cenderung tidak memiliki rasa dan beraroma kurang sedap. Selai ini kemudian peneliti beri nama seltacit. Selain dapat dikonsumsi sendiri, seltacit juga dapat bermanfaat bagi banyak pihak. Seltacit dapat membantu perekonomian, mengurangi pencemaran lingkungan, dan mengurangi ketimpangan. Untuk mendapatkan hasil seltacit yang sesuai harapan, peneliti melakukan uji kepada panelis. Hasil dari penelitian kemudian peneliti jabarkan secara objektif berdasarkan fakta, teori yang mendukung, dan gagasan peneliti. Didapat hasil akhir seltacit memiliki citarasa manis khas buah, aroma jeruk yang sedap, tekstur gel halus, dan warna yang menarik sehingga seltacit memiliki keunggulan tersendiri. Di era Society 5.0 saat ini, seltacit dapat dengan mudah dipublikasikan di internet dan menjadi penemuan yang dapat membuka jalan menuju penemuan-penemuan lain.
